Tiffin Sambar


Sambar is the most integral part of the South Indian cuisine and is a common dish served for all the meals including breakfast, lunch and dinner. For any kind breakfast like idli, dosa, vada or rice, sambar is considered to be the best accompaniment.


Hot sambar is regularly consumed in the meals not only for its taste and aroma but also for the health benefits as it is a protein packed soup made from toor dal. Any vegetables can be added as per your choice or variations to enhance the nutritional contentof this dish.

Sambar is prepared in different consistency for tiffin and rice. Now, let us look at the tiffin Sambar recipe for idli.




Tiffin Sambar


Ingredients:

Toor dal 100 g

Tomatoes 2

Garlic 5 bulbs

G chillies 1

Cumin seeds 1/4 tsp

Turmeric powder 1/2 tsp

Sambar powder 2 tsp

Salt to taste


Tempering:

Ghee 2 tbsp

Mustard seeds 1/4 tsp

Dry chillies 3

Shallots 10

Urad dal 1/4 tsp

Fenugreek 1/4 tsp

Asafoetida - a pinch

Curry leaves


Method:


Pressure cook dal with given ingredients for 3 whistles

Heat ghee in a kadai and add tempering

Add ingredients under tempering one after the other.

Saute Shallots till golden brown

Add tempering to cooked dal.

Finally add 1/2 lemon and coriander leaves.

Serve hot with idli or dosa.
