Spanish Baked Eggs/Shirred Eggs are prepared in a flat bottom dish where the peppery sauce is poured into the dish by making wells by dropping eggs into the well and seasoned, and later placed in the oven therefore eggs are baked resulting in elasticized threads in a parallel row.

Juicy delicious Shirred eggs rich in protein and minerals are quite easy to prepare for breakfast.

Ingredients

  • 4 Eggs

  • 2 Potatoes Peeled and cut into small cubes

  • 1 Chicken Sausage (optional)

  • 1 Onion chopped

  • 1 Garlic Clove chopped

  • 2 Tomatoes crushed/ puree

  • 1 tbsp Parsley chopped

  • 2 tbsp Oregano

  • 2 tbsp Black pepper

  • 1-2 tsp Salt

  • 2-3 tbsp Olive oil/Vegetable oil


Method

  1. Take a pan and place it in a medium flame, add some oil and add potatoes and fry for 5-8 minutes until half tender.

  2. Remove the potatoes and add oil into the pan as you see the bubbles add garlic, stir fry until golden then add onion as they become tender add the tomatoes puree, fried potatoes and salt, stir for 10 minutes in a medium flame add black pepper and oregano let the ingredients infuse well.

  3. Now preheat the oven for @ 180℃ . Meanwhile, take a flat bottom tray, add the peppery sauce and using a spatula make well to add the eggs and season it with parsley. Later, bake it for 10 minutes.

  4. As you hear the beep sound from the oven, take out the tray and serve along with Turkish bread/crusty Bread/Parotta.
