Chukku Kanji - Porridge with Dry Ginger


Chukku Kanji is one of the popular dish especially during Ramadan at Kanyakumari District (South India). Its one of the most light and healthy food during any time of the year especially made for easy digestion when your stomach needs a comfort food. Also best porridge during any flu attack as the dry ginger and jeera added to the porridge soothes the stomach.


Do prepare and enjoy this simple Porridge during this lockdown period when min ingredients are available to prepare your meal.





Ingredients

Dry ginger - 2 inch piece

Garlic - 4 pods

Rice - 1 cup

Grated Coconut - 1/2 cup

Cumin Seeds (jeera) - 1 tsp

Water - 4 cups

Salt to taste


Method


Rinse the rice well and pressure cook the rice with enough water for about 4 whistles and mash the rice well. Add enough water to make it like a porridge form. Grind together grated coconut, cumin seeds, dry ginger and garlic pods into a paste and add to the cooked rice and mix it well and bring it to a boil till cooked. Add salt to taste and switch off the stove once the porridge is ready. Serve with chutney or pickle of your choice.
