We all know soups are the best appetizers and also a good digestion agent for the upcoming meal. The most common soups are Tomato and Sweet Corn soups preferred by almost 70 percent of the people. Just to make a little change, let us try Broccoli soup. Broccoli carries s very good source of protein, Vitamin E, Calcium, Magnesium, Iron, and lot more. It has to be noted that Broccoli contains a very low amount of calories.
1 Fresh Broccoli
1 Medium size Potato
10 Soaked Almonds
5 Dry Almonds (Finely chopped)
2 tablespoon of Butter/Olive Oil
½ cup of Pasteurized Milk
Salt and Pepper as per requirement
Heat the pan, and boil the water for 5 mins. Now add the potato which has been cut into 10 cubes.
After the potato is half cooked in the water, add Broccoli which is chopped finely.
Peel the soaked Almonds put it into the jar along with the half-cooked Potato and Broccoli and grind them thoroughly by adding milk.
Heat the Butter/Olive Oil in the pan and add the puree which we had ground.
Add Salt and Pepper as per requirement and stir it well.
Add a little bit of water if the consistency is very thick.
Serve Hot Broccoli soup, by garnishing it with fresh cream and chopped Dry Almonds.
